This crunchy sweet granola is the perfect topping for yogurt at breakfast or to take with you on hikes.  Because this recipe is nut free it also makes a perfect school snack. 

Makes 24 servings.



4 cups of large flake oats

1 cup oat bran

1 cup coconut

2 tsp cinnamon

½ cup canola oil

½ cup maple syrup

2 Tbsp brown sugar

1 cup sunflower seeds

½ cup pumpkin seeds

1 cup dried cranberries

½ cup chopped dried apricots



1.     Mix together oats, oat bran, coconut and cinnamon together in a large bowl.

2.     Add the canola oil, maple syrup, brown sugar and seeds. Mix together until the oats are fully covered in the maple syrup mixture.

3.     Spread granola onto a parchment lined baking sheet and bake at 325°F for 15-20 minutes until it begins to turn golden.

4.     When the granola mixture is cool, mix in dried fruit.


Cook’s Tips:

The great thing about this recipe is its versatility! You can easily substitute a different type of seed or dried fruit. If you have honey you can also switch it for the maple syrup.
