Fresh Pea Salad

An easy salad to enjoy during the hot summer days in Nova Scotia.  As a side salad for dinner or double this portion for lunch, it is fresh and delicious!  This salad contains fresh herbs as well as nuts and avocado to add to the many flavors, but feel free to add your own zest.

Ingredients:

  • 10-12 fresh peas podded

  • 3-4 large torn leaves Leaf lettuce

  • 1/2 cup chopped avocado

  • 1/4 cup almonds, chopped finely 

  • bunch fresh herbs chopped finely (chives, basil, oregano)

  • shredded Parmesan for garnish

 

Directions:

  1. Combine all ingredients in a bowl 

  2. Sprinkle a blend of olive oil, balsamic vinegar, fresh minced ginger and garlic and a dash of fresh lemon juice on top.
