Leek and Potato Soup

As soon as I received my Nourish Your Roots (link to à https://www.nourishns.ca/nourish-your-roots) fresh produce box, the first thing I made was this Leek and Potato Soup. It is my number one ‘fall favourite’ because it is absolutely delicious and perfect for warming you up as the days start to get chilly.

Ingredients:

 

  • 3 large leeks, chopped (white parts only)

  • 1 large yellow onion, chopped

  • 2 Tbsp. butter

  • 4 medium potatoes, unpeeled and thinly sliced

  • 4 cups low sodium chicken stock

  • ½ cup milk

  • Salt and pepper to taste

Instructions

In a large saucepan, melt the butter over medium heat. Add the onions and leeks and sauté until translucent. Add the potatoes and cook until soft. Pour in the stock and simmer on medium-low heat for 20-30 minutes. Using an immersion blender or food processor, blend until smooth. Add the milk and salt and pepper to taste and blend until combined. Garnish with your choice of sour cream, fresh chives and bacon.
