Spotlight on: Courtney Henry, RD
Registered Dietitian, The Confederacy of Mainland Mi'kmaq
Courtney has worked as the Diabetes Community Advisor with The Confederacy of Mainland Mi’kmaq since 2018, supporting the Aboriginal Diabetes Initiative. In this role she covers eight of the First Nations communities across NS, as far as Yarmouth to Paq'tnkek near Antigonish. In her previous role after completing her internship, she contributed to supporting the health of communities as an In-Store Dietitian with Atlantic Superstore in Truro, New Glasgow, Antigonish and Port Hawkesbury.
What do you love most about your job?
There are so many things I love about my job, but if I had to narrow it down to two things I would say one would be that I am so fortunate to work with people of all ages, which makes every day different, and that I get to create programming that is fun, interactive and educational! The other thing I love most about my job is how I get to witness the strength and resiliency of First Nations and have them teach me things during classes too! I have been so fortunate to learn some of the Mi’kmaq language and so many of their cultural practices.
What is your favorite place to find new recipes?
I have several great cookbooks, including a cookbook with lots of family and close friends’ “famous” recipes, which I use lots! But I also LOVE checking out lots of the Dietitians in NS and across Canada that have Facebook pages. They often share some of the most delicious recipes! I do a lot of Pinterest looking for inspiration but have had lots of fails from there too, so I tend to stick to people I trust so that I end up with a delicious new recipe!
What is one food that is always in your fridge/ freezer/ pantry?
If I had to pick one food that is always in my fridge it would be: cheese (just so good on its own and added to so many foods). In my pantry: popcorn (love it for snacks!) and in my freezer: some of my own (or my mom’s) homemade lasagna, that’s ready to go for lunches or suppers. I love (and rely on) freezer meals from leftovers to make future meals quicker on busy days!
