Green Salad with Pickled Beets

This simple salad is also beautiful, and has some serious flavor!

Ingredients:

 

  • 2 cups mixed greens

  • 1 ripe avocado diced

  • 1/4 cup diced cucumbers

  • 1/2 cup diced peppers

  • 1/4 cup red onion sliced

  • 1/2 cup diced pickled beets

  • 1/2 cup goat cheese crumbled

  • 1/4 cup roasted nuts (pine nuts, pistachios, almonds, pecans or walnuts work well)

  • Fresh ground pepper and sea salt to taste

Instructions

  1. Mix all ingredients. Sprinkle with your favorite salad dressing (try the easy one below!).

Salad Dressing (optional):

  • 1 cup olive oil

  • 1/3 cup apple cider vinegar

  • 3 Tbsp honey

  • 2 garlic cloves, minced
