Ingredients

1 ½ cups Quinoa, cooked and cooled

½ cup Coconut Oil

½ cup Sugar

½ cup Cocoa Powder

1 tsp Baking Powder

¼ cup Coconut Milk

2 ea Large Eggs

1 tsp Vanilla

 

Procedure

1.     Preheat oven to 350*F

 

2.     Place all ingredients in the food processor, and process into a batter. Pour into parchment lined baking dish 8x8 and bake for 30-35 minutes, or until set. You can also use a muffin pan to make individual servings.

 

Chocolate Coconut Ganache

3/4 cup Coconut Milk

4 oz Dark Chocolate

1 tsp Coconut Extract

¼ cup Shredded Coconut, toasted

 

1.     Heat coconut milk in a sauce pot, and stir in chocolate until melted. Remove from heat and add the extract. Pour over brownies and sprinkle with the toasted coconut. Cool for 20 minutes before serving.

 

Serves 6-8
